I have compiled 100+ of my best recipes into one book, this includes all of the recipes in my previous book. Some of the recipes were from over half a decade ago while I was learning to cook to cope with my medical issues, but most are far more recent expressions of my passion for cooking while still trying not to overwork myself. They are easy to make recipes that anyone can cook, even if you are unable to cook for long periods. I take shortcuts to cut down on the cooking time whenever possible without majorly affecting flavor. This cookbook has no photos to make it affordable for those who need it.

Spicy Cheese Crisps - Yields 8-10 Servings

  • 1 Cup 2% Low Sodium Natural Shredded Mozzarella
  • 1 Tablespoon Garlic and Herb
  • 1/4 Teaspoon Chipotle pepper
  • Olive Oil Spray

Scoop the cheese 1/2 teaspoon at a time, on a lightly sprayed baking sheet, separating the scoops 1/2 inch apart. Sprinkle the seasonings evenly on the cheese and bake in an oven preheated to 300 for 8-13 minutes. Store in an airtight container in the fridge.
